Star Tested

Using asparagus cooking water imparts subtle flavour while the spelt pasta adds a nutty note. Adapted from The Gourmet Cookbook.

1 lb (450 grams) asparagus

1 tsp finely grated lemon zest
1/4 cup extra virgin olive oil
3/4 lb (340 g) spelt pasta
3/4 cup finely grated parmesan
salt + freshly ground black pepper

Cut asparagus into 1-inch pieces; set aside tips. Cook stems in large pot of boiling salted water until very tender, 8 minutes. Use slotted spoon to transfer to colander in sink; rinse with cold water. Drain well and transfer to food processor.

Cook tips in same water until tender, 5 minutes. Use slotted spoon to transfer to colander, reserving cooking water. Rinse with cold water and drain; set aside.

Add zest and oil to food processor and pur??e with stems. Transfer to large frying pan.

Cook spelt pasta in asparagus water about 9 minutes, 3 minutes shy of the maximum recommended cooking time. Reserve 1 cup of cooking water and drain pasta.

Add pasta, asparagus tips and 1/2 cup cooking water to pan with asparagus pur??e. Cook over high heat, stirring, about 5 minutes until sauce thickens and pasta is cooked al dente. Add more cooking water 1/4 cup at a time until sauce coats pasta but is a little runny.

Stir in cheese to thicken; add salt + pepper to taste and cook stirring, until cheese melts, about 2 minutes. Makes 6 servings.
